Plum jam with bitter almond flavor

Ingredients for 1 servings:

  • 1,000 g plum(s), dark
  • ½ lemon(s), the juice
  • 40 g sugar
  • 1 bag of vanilla sugar
  • ½ tsp cinnamon powder
  • ½ tsp clove powder
  • 10 drops flavoring (bitter almond)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

Makes 3 glasses of approx. 320 ml each

Halve the plums, remove the pits, then quarter them, cut into small pieces, and place them in a large pot. Increase the heat to high, add the sugar, vanilla sugar, and lemon juice, and stir well. Bring the mixture to a boil, reduce the heat to low, cover, and simmer for 1 hour, stirring occasionally. 15 minutes before boiling, add the cloves, cinnamon, and bitter almond flavoring, stir well, and replace the lid. After 1 hour, test for settling—then pour the plum jam into twist-off jars and seal immediately. The cellar is ideal for storage.
