Plum muffins

Ingredients for 1 servings:

  • 250 g plum(s)
  • 250 g flour
  • 1 tsp baking powder
  • 100 g sugar
  • 50 g butter, liquid
  • 1 tsp baking soda
  • 100 ml sour cream
  • 1 packet of vanilla sugar
  • 150 ml milk or yogurt
  • 2 eggs

Mix the flour, baking powder, and baking soda in a bowl and set aside. Wash the plums, pat them dry, and remove the stones. Cut into fine cubes. Sprinkle with sugar and cinnamon, if desired. In another bowl, lightly beat the sugar, vanilla sugar, and eggs for a maximum of 2 minutes. Now add the butter, yogurt (or milk), and sour cream and continue beating briefly. Finally, add the flour and plums and stir only until everything is well combined. Do not beat any more; use a spoon to do this. Pour the batter into well-greased baking cups and bake in a preheated oven at approx. 190°C (top/bottom heat) for approx. 20 minutes. Since every oven heats differently, be careful; when the muffins start to turn slightly brown, they are done. Let them rest in the pan for a short while, then turn them out and let them cool completely. They taste great warm, but they are also delicious.
