Cook the condensed milk in the sealed can in a sous vide water bath at 85°C for 15 hours. Let it cool to room temperature, but do not open the can first. This will become the dulce de leche. Layer all ingredients in glasses. First add the cookie crumbs. Then a layer of dulce de leche. Finally, add a layer of crème fraîche to the glass. Set some of the cookie crumbs aside for garnish. Thinly slice the bananas and cook in a pan with the hazelnut liqueur until golden brown. Remove the bananas from the pan and add the remaining cookie crumbs to the pan to absorb the flavors from the pan. Pour the cooked bananas into the glasses and sprinkle with the cookie crumbs from the pan. Abel prepared this recipe as a dessert on the show “The Perfect Dinner” – Day 1 from Passau – on Monday, September 12, 2022.
