Pomegranate Vodka Jam

Ingredients for 2 servings:

  • 250 ml pomegranate juice, from about 3 large fruits
  • 85 g gelling sugar 3:1
  • 1 tsp, leveled vanilla paste
  • 1 shot of vodka (Zubrowka Bison Gras Vodka)
  • 2 g gelatin powder, optional

Instructions

Working time approx. 10 minutes; Rest time approx. 5 hours; Cooking/baking time approx. 10 minutes; Total time approx. 5 hours 20 minutes

Halve the pomegranates and squeeze the juice. Bring the juice to a boil with the preserving sugar and simmer gently. Add the vanilla paste. Note: I added a little gelatin because my husband prefers thicker jams. It’s not necessary; it just makes the jam a bit firmer. Let the mixture cool slightly and add the vodka. Pour the spread into glasses and enjoy.
