Poor Knight from Brioche with Berry Salad

Ingredients
 

French toast

  • 4 Brioche
  • 5 Eggs
  • 500 ml Milk
  • 150 ml Cream
  • 120 g Sugar
  • 1 Vanilla pods (pulp only)
  • 1 pinch Salt
  • 6 tbsp Butter

Berry salad

  • 150 g Strawberries
  • 150 g Raspberries
  • 150 g Blackberries
  • 150 g Blueberries
  • 1 tbsp Grand Marnier
  • 3 tbsp Unsalted pistachio nuts
  • 3 tbsp Powdered sugar
  • Mint

Instructions
 

  • Cut the brioche into slices. In a bowl, beat the eggs, milk, cream, sugar, vanilla pulp and a pinch of salt until frothy. Dip the brioche slices in the milk and egg mixture and then layer them in a baking dish. Pour the remaining liquid over the brioche into the baking dish. Spread the butter flakes loosely over the top. Put the whole thing in the oven at 180 ° C and bake until the milk and egg mixture has thickened.
  • In the meantime, chop the berries and pistachios with a kitchen knife. Then mix the berries with the Grand Marnier.
  • Finally, cut the still warm Poor Knight out of the mold, place it on a plate, arrange the berry salad around it and sprinkle with the chopped pistachios. Then sieve some more powdered sugar over it and decorate with mint.
