Poor Knight Casserole

The perfect poor knight casserole recipe with a picture and simple step-by-step instructions.

  • 8 Discs Yeast bread — brioche
  • 8 Discs Pears
  • 4 tablespoon Sugar
  • 4 tablespoon Lemon juice
  • 1 packet Custard powder
  • 500 ml Milk
  • 3 Eggs
  • 1 pinch Salt
  • 50 g Walnuts
  • 80 g Cranberries
  • 80 g Powdered sugar
  1. The bread slices at 200c. toast in the oven.
  2. Peel the pears and cut into wedges. Heat the butter in a pan, sprinkle with 1 tablespoon of sugar, sauté the pears briefly and deglaze with the lemon juice – leave to cool.
  3. Whisk the custard powder, milk, eggs, remaining sugar and salt well.
  4. Cut the bread slices in half in the egg milk and layer them alternately with the pears in a baking dish.
  5. Scatter the cranberries and the chopped walnuts on top, pour the rest of the egg milk over them
  6. Now off to the 200c. warm oven for 20-25 minutes — take out, let rest a little and dust with powdered sugar.
