Poor Knight Casserole
The perfect poor knight casserole recipe with a picture and simple step-by-step instructions.
- 8 Discs Yeast bread — brioche
- 8 Discs Pears
- 4 tablespoon Sugar
- 4 tablespoon Lemon juice
- 1 packet Custard powder
- 500 ml Milk
- 3 Eggs
- 1 pinch Salt
- 50 g Walnuts
- 80 g Cranberries
- 80 g Powdered sugar
- The bread slices at 200c. toast in the oven.
- Peel the pears and cut into wedges. Heat the butter in a pan, sprinkle with 1 tablespoon of sugar, sauté the pears briefly and deglaze with the lemon juice – leave to cool.
- Whisk the custard powder, milk, eggs, remaining sugar and salt well.
- Cut the bread slices in half in the egg milk and layer them alternately with the pears in a baking dish.
- Scatter the cranberries and the chopped walnuts on top, pour the rest of the egg milk over them
- Now off to the 200c. warm oven for 20-25 minutes — take out, let rest a little and dust with powdered sugar.
