Ingredients for 2 servings:

  • 4 slice(s) white bread, stale or toast
  • ½ liter of milk
  • ½ vanilla pod(s)
  • Lemon peel, untreated, grated
  • 1 tsp sugar
  • 4 eggs
  • breadcrumbs
  • 80 g butter
  • Cinnamon sugar for sprinkling

Formerly a food emergency in the post-war period, today a delicacy

Bring the milk to a boil with the vanilla pod, a little lemon zest, and a teaspoon of sugar, then let it cool. Once cooled, remove the vanilla pod. Soak the bread in the milk. Crack the eggs and mix, then dip the bread slices in the egg and coat in breadcrumbs. Fry the bread slices in butter until browned on both sides and sprinkle with sugar and cinnamon. Compote or wild berries go very well with French toast.
