Ingredients for 4 servings:

  • 4 pork chops
  • 2 onions
  • Mustard
  • Tomato ketchup
  • 500 ml water, at least
  • potato flour
  • salt and pepper
  • oil
  • Broth (instant)

like grandma makes it, with lots of sauce

Wash the chops and trim any excess fat. A little fat should remain on them to make the sauce better. Season with salt and pepper and brush with a little mustard. Then fry them in a hot pan with a little oil on all sides. Now add the onion and fry it too. Deglaze with about half a cup of water and let it reduce so that the sauce browns slightly, but do not let it burn. Repeat this process two more times. Then add about 0.5 liters of water, cover, and simmer for about 30-40 minutes. Then remove the meat and thicken the sauce with potato flour. Season to taste with stock, pepper, mustard, and ketchup. Add the meat back in and heat through. This goes well with noodles, spaetzle, but also with parsley potatoes or boiled potatoes.
