Ingredients for 2 servings:

  • 1 pork fillet(s), cleaned
  • 1 tbsp fat, for frying
  • Salt
  • pepper

Instructions

Working time approx. 10 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Nestone’s perfect pork fillet

Take a whole, trimmed pork fillet. Season with salt and pepper, and sear it all over in a pan in a little cooking fat. Meanwhile, preheat the oven to 120°C (250°F) top/bottom heat. After searing, cook the fillet on the middle rack in an open-top aluminum foil on a wire rack for 45 minutes. Remove from the oven after 45 minutes and let rest for about 3-5 minutes. The juices collected in the foil can be used as a base for a sauce. This method of preparation produces a super juicy, pink-colored pork fillet.
