Pork fillet medallions under a rosemary, goat cheese and garlic topping

Ingredients for 2 servings:

  • 1 pork fillet(s)
  • 2 rolls of goat cheese
  • 3 sprigs rosemary
  • 2 cloves garlic
  • some salt and pepper
  • 1 tbsp clarified butter

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Wash, dry, and trim the pork fillet. Then cut it into medallions. Remove the rind from the goat cheese and cut it into small pieces. Peel and finely grate the garlic, finely chop the rosemary, and mash everything with salt and pepper into a paste – ideally with a fork. Sear the pork fillet on both sides in clarified butter, season with salt and pepper. Then place it in a baking dish and spread the goat cheese topping on top. Bake in the oven at 200°C (top/bottom heat) for 5 minutes. Serve with boiled potatoes and a fresh green salad.
