Pork loin in red wine sauce

Ingredients for 4 servings:

  • 1 large pork loin(s)
  • ¼ liter meat broth
  • ¼ liter red wine
  • Salt
  • pepper
  • Fat

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Salt and pepper the pork loin. Heat the fat in a pan and sear the loin until crisp and then remove it. Add the meat broth and red wine to the hot pan and bring to a boil. Then add the loin and cook with the lid on for about fifteen to twenty minutes over medium heat. Remove the meat from the sauce and thicken it slightly. Slice the meat and return it to the sauce, allowing it to heat through. This goes wonderfully with spaetzle and buttered vegetables.
