Pork loin with Brie and cranberries

Ingredients for 4 servings:

  • 800 g pork loin(s)
  • 1 cheese (Brie)
  • 3 cups of sweet cream
  • 300 g mushrooms or chanterelles
  • 200 ml red wine, strong
  • nutmeg
  • 3 tsp sauce powder (hunter’s sauce, instant)
  • Salt and pepper from the mill
  • Paprika powder
  • 1 jar cranberries

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat oven to 180 degrees Celsius (350 degrees Fahrenheit). Sear the meat, season, and remove from the pan. Place side by side in a baking dish and top with cranberries and Brie. Bake in the hot oven for about 5-10 minutes. Deglaze the pan with the wine, reduce, add the mushrooms, pour in the cream, and simmer for a few minutes. Season generously with salt, pepper, nutmeg, and paprika. Finally, add 3 teaspoons of hunter’s sauce (if desired) and bring back to a boil. We serve this with spaetzle and a fresh salad.
