Ingredients for 4 servings:
- 1 ½ kg pork neck
- 1 pack of feta cheese, approx. 200 g
- 6 tbsp yogurt
- 1 onion(s)
- 15 olives
- 3 garlic cloves
- 4 tbsp gyro seasoning
- salt and pepper
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 50 minutes
First, prepare the filling. Finely chop the feta and mix with the yogurt. Chop the olives, garlic, and onion, add them, and set the filling aside. Make about a 2 cm cut in the pork neck, twisting gently each time to form a sliced roll. Season the inside with about 1 teaspoon of salt and pepper, spread the filling, and roll it up. If you don’t use quite as much as I do, it’s much easier to roll up. Secure with toothpicks or kitchen string and rub the outside with the gyro seasoning on all sides. Place in the indirect area of the grill at 120-130°C and let it cook for 1.5 hours. The result will impress everyone, absolutely everyone, who eats olives!
