Port wine pear with goat cheese

Ingredients for 2 servings:

  • 1 pear(s), solid
  • 1 lemon(s), squeezed
  • ¼ liter port wine
  • 1 vanilla pod(s), split
  • 2 slices of goat’s cheese
  • 3 tbsp brown sugar
  • e.g. balsamic vinegar

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Peel the pear with a vegetable peeler, halve it, and core it. Then drizzle with lemon juice. Bring the port wine, vanilla pod, and 1 teaspoon of brown sugar to a boil, add the pear halves, and simmer for about 10 minutes. Then place the pear halves in a baking dish, arrange the goat cheese on top, and press down firmly. Finally, heap a generous amount of brown sugar on top and bake in the oven at 200°C (400°F) until the sugar is melted and nicely browned. Continue simmering the port wine until it thickens like syrup, then add a dash of balsamic vinegar and drizzle the mixture onto the plate to create patterns.
