Potato and Leek Soup with Mince
The perfect potato and leek soup with mince recipe with a picture and simple step-by-step instructions.
- 1,5 kg Potatoes
- 1 kg Leek
- 2 liter Vegetable broth
- 1 cups Crème fraîche or sour cream
- 500 g Minced meat
- Salt and pepper
- Clean the leek and cut into rings. Peel and dice the potatoes.
- In a large saucepan, cook the vegetable stock with the leek and the potatoes on a low level until the leek is soft.
- Remove the saucepan from the heat, add the crème fraiche and puree. Season to taste with salt and pepper.
- Season the minced meat with salt and pepper, fry it in a pan and chop it up. Put the meat in the soup and sprinkle with some finely chopped parsley.
