Potato and Leek Soup with Mince

The perfect potato and leek soup with mince recipe with a picture and simple step-by-step instructions.

  • 1,5 kg Potatoes
  • 1 kg Leek
  • 2 liter Vegetable broth
  • 1 cups Crème fraîche or sour cream
  • 500 g Minced meat
  • Salt and pepper
  1. Clean the leek and cut into rings. Peel and dice the potatoes.
  2. In a large saucepan, cook the vegetable stock with the leek and the potatoes on a low level until the leek is soft.
  3. Remove the saucepan from the heat, add the crème fraiche and puree. Season to taste with salt and pepper.
  4. Season the minced meat with salt and pepper, fry it in a pan and chop it up. Put the meat in the soup and sprinkle with some finely chopped parsley.
