Potato and Leek Stew
The perfect potato and leek stew recipe with a picture and simple step-by-step instructions.
- 1 kilogram Potatoes (waxy)
- 3 Rods Leek
- 2 piece Onions (medium)
- 2 piece Garlic cloves
- 150 g Smoked bacon streaked
- 300 g Meat sausage
- 150 Milliliters Vegetable broth
- 500 Milliliters Buttermilk
- 0,5 tsp Allspice grains
- 0,5 tsp Juniper berries
- 1 tsp Coarse sea salt
- 0,5 tsp Dried marjoram
- 0,5 tsp Rose paprika powder (hot)
- 0,5 tsp Chili powder
- 0,5 tsp Pepper

PREPARATION
- Peel and dice the potatoes (approx. 1.5 – 2 cm). Finely chop the onions and garlic. Cut the bacon into large cubes (approx. 1 – 1.5 cm). Wash the leek thoroughly and roughly cut into slices. Cut the meat sausage into small cubes. Grind the allspice grains, juniper berries and the coarse sea salt in a mortar and mix with the marjoram, rose paprika powder, chili powder and pepper.
PREPARATION
- Leave the bacon in a large roasting pan at medium temperature. After about 4 minutes add the onions and garlic and cook for another 2 minutes. Now add the potatoes, pour the vegetable broth over the whole thing and simmer on low heat for 15 minutes.
- After everything has simmered for 15 minutes, add the leek and the prepared spice mixture and cook for another 10 minutes at a medium temperature.
- Now pour in the buttermilk, add the meat sausage and let the stew boil down for approx. 5 minutes without the lid. Arrange to taste – DONE – BON APPETITE.
tip
- Instead of the meat sausage, you can cook this hearty stew with 2 – 3 smoked sausages – very tasty and a classic here in Westphalia. Have fun cooking … yours Oliver
