Potato and minced meat pan

Ingredients for 4 servings:

  • 600 g potatoes, new
  • 4 tbsp oil
  • salt and pepper
  • 2 large bell peppers
  • 1 stalk(s) leek
  • 500 g minced meat, mixed
  • 2 tbsp tomato paste
  • some sweet paprika powder
  • 500 g tomatoes, pureed
  • ½ bunch parsley
  • 150 g sour cream or creme fraiche

Wash the potatoes thoroughly and cut them into wedges lengthwise. Heat 3 tablespoons of oil in a pan and fry the potatoes. Season with salt and pepper. Cover and fry for 20-25 minutes, turning frequently. Peel and dice the onions. Finely chop the bell peppers and leeks. Heat 1 tablespoon of oil in a large pan. Fry the minced meat until crumbly. Fry the onions, bell peppers, leeks, and tomato paste for about 5 minutes. Season with salt, pepper, and paprika. Add the tomatoes and about 100 ml of water, bring to a boil, and simmer uncovered for about 5 minutes. Roughly chop the parsley. Add the potatoes to the minced meat and vegetable mixture. Season to taste and serve with sour cream. Sprinkle with sweet paprika and parsley.
