Potato and sausage cakes

Ingredients for 2 servings:

  • 500 g waxy jacket potatoes from the day before
  • 300 g meat sausage or cooked ham, cut into slices about 0.5 cm thick
  • 1 egg(s)
  • 150 g flour, maybe a little less
  • some salt and pepper
  • some nutmeg
  • Clarified butter for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Peel the boiled potatoes and grate them using the coarse side of a grater. Cut the sausage (or ham) into small, square cubes. Mix both with the egg and seasonings, gradually adding the flour. The batter should have a consistency similar to potato pancake batter. Take a heaped tablespoon of the potato mixture and form it into a flat cake in a hot pan. Fry until golden brown on both sides and drain on kitchen paper. Serve with a mixed salad. This dish is the perfect way to use up leftover boiled potatoes, as you usually have eggs and sausage on hand.
