Potato and Savoy Cabbage Curry

The perfect potato and savoy cabbage curry recipe with a picture and simple step-by-step instructions.

  • 500 g Potatoes
  • 500 g Savoy
  • 5 Mushrooms brown
  • 3 Tomatoes
  • 1 Onion
  • 1 piece Ginger 2-3 cm
  • Curry, turmeric, cumin, ground coriander, cinnamon, cayenne pepper
  • 300 ml Vegetable broth
  • 6 tbsp Unsweetened soy yogurt
  • Coconut oil
  1. Finely dice the onion and ginger.
  1. Roughly dice the potatoes, cut the savoy cabbage into fine strips, quarter the mushrooms and dice the tomato.
  1. Heat coconut oil in a deep pan or wok. First sauté the onion and ginger. Then add the remaining vegetables and fry for 5 minutes.
  1. Stir in 2 tsp turmeric, 1 tsp cumin, 1 tsp coriander, 1/2 tsp cinnamon and 1/2 tsp cayenne pepper.
  1. Pour in the stock and simmer closed for approx. 15 minutes.
  1. Remove from heat and stir in yogurt.
