Potato and vegetable pan

Ingredients for 3 servings:

  • 600 g potatoes, small
  • 3 bell peppers, red
  • 1 onion(s)
  • 1 eggplant(s)
  • 250 g meat sausage
  • 150 g cheese, grated
  • salt and pepper
  • rosemary
  • Clarified butter

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes

First, boil the potatoes with their skins on, for 12-15 minutes, depending on their size. Then let them cool completely so they don’t become mushy when fried. Chop the vegetables and sausage into small pieces and fry them briskly. I use clarified butter for this. After about 5-6 minutes, remove them from the pan and fry the potatoes until crispy, then add the vegetable mixture back in and season everything with salt, pepper, and rosemary. Toss briefly, sprinkle with grated cheese, and cover. Turn off the stove. After 2-3 minutes, the cheese will have melted nicely. Enjoy!
