Potato cake with raisins

Ingredients for 1 servings:

  • 50 g raisins
  • 100 ml water
  • 500 g potatoes, boiled
  • 250 g almonds, grated
  • 180 g honey
  • 150 ml water
  • 1 tsp baking powder
  • Honey
  • 1 tbsp desiccated coconut

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

It’s best to soak the raisins in 150 ml of water a few hours in advance. Peel and finely grate the potatoes, mix with the ground almonds, honey, water, and baking powder. Stir in the raisins and water. Pour the batter into a springform pan and bake at 200°C for about 45 minutes. Brush with honey while still warm and sprinkle with desiccated coconut.
