Potato-carrot-leek soup with minced meat, bacon and melted cheese

Ingredients for 2 servings:

  • 3 potatoes
  • 3 carrots
  • 1 leek(s)
  • 200 g minced meat
  • 200 g bacon cubes
  • 1 stock cube
  • 1 liter of water
  • 200 g processed cheese
  • some fat for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Using a mandoline, slice the potatoes and carrots into sticks. Slice the leek into rings. Sauté the potato and carrot sticks with the leek rings in a little fat. Add the bacon cubes and ground beef and fry. Add 1 liter of water, dissolve the stock cube, and simmer the soup for 20 minutes. Stir in the cream cheese and serve.
