Potato casserole with broccoli

Ingredients for 2 servings:

  • 500 g broccoli
  • salt water
  • 6 m.-sized potatoes, boiled
  • 2 bell peppers, red
  • 250 ml vegetable stock
  • 5 tbsp processed cheese with herbs
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Divide the broccoli into florets and cook in salted water for about 10 minutes until al dente. Peel and slice the potatoes, and roughly dice the trimmed bell peppers. Place everything in a casserole dish. Bring the vegetable broth to a boil, stir in the cheese, and let it melt. Season with salt, pepper, and nutmeg. Pour the sauce over the casserole and bake in a preheated oven at 200°C for about 20 minutes.
