Ingredients for 1 servings:

  • 200 g potatoes, floury
  • 1 tsp salt
  • 2 tbsp balsamic vinegar
  • 1 tsp, heaped honey
  • 3 tbsp herbal oil
  • 3 tbsp crème fraîche
  • 2 tbsp, heaped wild garlic or parsley, chives, lemon verbena
  • e.g. salt and pepper
  • e.g. chili salt

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

with leaf salads or asparagus

Wash, peel, and finely chop the potatoes. Boil in a little salted water for about 15 minutes, then drain, reserving the cooking water. Place the potatoes in a blender with the remaining ingredients and blend briefly. Thin with the cooking water until the desired consistency is reached. The salad dressing should be nice and creamy.
