Ingredients for 5 servings:

  • 2 ½ kg potatoes, preferably floury
  • 2 pts. potato flour
  • 4 eggs
  • Salt

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Peel the potatoes and boil them in salted water. Then let them cool slightly and mash them with a potato ricer. Add the eggs and one packet of potato flour and knead well. You may need to add a little more from the second packet. Add just enough flour so that no dough sticks to your fingers when kneading. The dough should be nice and smooth. Now form the dumplings. Bring salted water to a boil and add the dumplings. Cook for 2 minutes. Then put the lid on the pot and let the dumplings simmer on low heat for about 15 minutes. This goes well with all kinds of roasts with hearty gravy.
