Ingredients for 4 servings:
- 4 m.-sized potatoes
- 3 cloves garlic
- 50 g almond(s), grated
- 1 cup(s) oil (olive oil)
- 1 tsp vinegar
- salt and pepper

Skoradalia
Cook the potatoes in salted water, peel, and press them through a potato ricer. Squeeze in the garlic and mix with the almonds until smooth. Gradually whisk in the oil and vinegar (or 2 teaspoons, to taste). Season generously with salt and pepper. Since the garlic flavor is quite strong in this puree, you might want to start with only 2 cloves of garlic. However, the original recipe calls for 4 cloves.
