Ingredients for 4 servings:
- 5 m.-sized potatoes
- 3 cloves garlic
- Salt
- ½ tsp vinegar
- 1 ½ tsp oil
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Greek starter/side dish
Boil and peel the potatoes. Add the garlic to the potatoes and puree with a hand blender (or potato masher). Add the vinegar and salt (I’ve given a specific amount, but I recommend tasting it) and then drizzle with the oil until smooth and even. Serve on appetizer or breakfast plates. Skordalia goes well with other appetizers or Greek dishes. I recommend white bread as a side dish.
