General information in advance: The quality of the cheese cream depends on the right choice of feta cheese. I recommend a feta cheese that isn’t too strong and, above all, not too salty. If the cheese is too intense, you can achieve the ideal flavor by adding more cream cheese. The recipe: Crumble the feta cheese into many small pieces. I’ve found it works best to lightly crush the feta cheese with a fork. Then mix the cream cheese with my Greek spice paste until a slightly reddish cream forms. Then gently stir in the feta cheese. I personally prefer it when small pieces of feta cheese are still noticeable in the cream. However, if you prefer a more homogenous cream, you can also put everything in the food processor—the flavor will still be delicious. The ideal flavor is achieved by letting the cream sit for at least a day before enjoying it. If you eat it beforehand, it’s also delicious, but less intense.
