Ingredients for 2 servings:
- 300 g mashed potatoes from the previous day
- 2 eggs
- 4 tbsp breadcrumbs
- 1 tbsp olive oil
- 2 tbsp powdered sugar
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes
Recycling leftovers
Mix the mashed potatoes with the eggs and breadcrumbs. Heat the oil in a hot pan, add the potato and egg mixture to the hot oil, and flatten the mixture like a pancake. Brown the mixture and turn it over once. Then tear the mixture into pieces, like a proper Kaiserschmarren (sweet pancake) and fry briefly again. Sprinkle with powdered sugar. Serve with any kind of pickled fruit. It can also be served as a dessert.
