Potato salad grandma's style

Ingredients for 4 servings:

  • 750 g waxy potatoes, cooked in their jackets, peeled, cut into not too thin slices
  • 250 ml salt water, salt content as desired, or broth, boiling hot
  • Pepper, white
  • 3 tbsp rapeseed oil
  • 2 tbsp wine vinegar
  • some salt
  • possibly honey, liquid
  • 1 medium-sized onion(s), finely diced
  • 1 tsp chopped herbs, e.g. parsley, chives, chervil

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 25 minutes; Total time approx. 2 hours 55 minutes

Place the potato slices in a bowl, pour over the salted water or broth, and after about 5 minutes, remove them with a slotted spoon and transfer them to a salad bowl. Whisk together the oil, vinegar, and salt (or honey if desired) until a thick sauce forms. Stir in the onion and herbs, pour over the salad, and fold in. Cover and let the salad stand for 2 hours.
