Potato Salad with Fresh Herbs
The perfect potato salad with fresh herbs recipe with a picture and simple step-by-step instructions.
- 8 size Jacket potatoes, I still had some from the day before
- 2 hard boiled Eggs
- 4 Pickled cucumbers
- 250 g Meat sausage
- 4 tbsp Mayonnaise, homemade or purchased
- Chives
- Parsely
- Pepper
- Salt
- Peel the potatoes and cut into thin slices. Now peel the eggs, cut them into small pieces, and do the same with the meat sausage and pickles. Wash the parsley and chives, pat dry a little and cut into small pieces. I made my mayonnaise myself. (see also my recipe for house style potato salad). I then mixed the herbs and pickles into my mayonnaise. Mix the potatoes, eggs, sausage and the remoulade you have just made and season with salt and pepper. Let something go through. We had small, marinated turkey schnitzel with it.
