Potato salad with smoked mackerel

Ingredients for 6 servings:

  • 1 kg potatoes
  • mayonnaise
  • 2 mackerel(s), smoked
  • 2 bunch spring onions
  • salt and pepper
  • lemon juice
  • possibly olives

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Boil the potatoes unpeeled. Let them cool, peel them, and chop them finely. Chop the spring onions as well. Remove the skin and bones from the mackerel and chop them finely. Mix everything with mayonnaise and season with lemon juice, salt, and pepper. Olives also taste good.
