potato scones

Spread the love

Ingredients for 12 servings:

  • 200 g flour
  • 4 tsp baking powder
  • 1 pinch of salt
  • 1 pinch of nutmeg, grated
  • 50 g butter
  • 250 g mashed potatoes
  • 1 egg(s)
  • 1 tbsp milk, as needed
  • Flour, for working

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Sift the flour, baking powder, salt, and nutmeg into a bowl and mix. Melt the butter and stir it into the mashed potatoes. Add the mashed potatoes to the flour mixture and mix with the egg, preferably with a wooden spoon. The dough should be light but firm and easy to roll out without sticking. Knead in a little milk if necessary. Preheat the oven to 220°C (fan oven: 200°C, gas mark 4-5). Roll out the dough on a floured surface to a thickness of about 2 cm and cut out about 12 scones using a glass or a cookie cutter. Line a baking tray with baking paper and place the scones on it. Place the tray in the hot oven and bake for 12-15 minutes, until the surface is a lovely golden brown. Variation: Knead 30 g of grated cheese and/or 1/2 finely chopped onion into the dough.
