Potato Soup with Smoked Pork and Leek

Ingredients
 

  • 200 g Kasseler
  • 1 Westphalian coarse sausage
  • 2 tablespoon Extra virgin olive oil
  • 0,5 Diced onion
  • 2 size Potatoes
  • 1 piece From a large carrot
  • 1 piece From the parsnip
  • 1 Root parsley with the green
  • 2 Leek sticks young
  • 1 liter Vegetable broth - or more
  • Black pepper from the mill
  • Salt

Instructions
 

  • Preparation: cut smoked pork and Mettwurst into cubes; Cut the leek into small slices and dice the remaining vegetables with the potatoes, putting the green of the parsley root aside, the soup is only added last (of course, finely chopped).
  • Preparation 2: Heat the olive oil in a sufficiently large saucepan and gently fry the smoked pork and Mettwurst cubes in it, add the onions and simmer until they are translucent.
  • Now put the vegetables and potatoes in the pot and sauté them briefly, then pour in enough vegetable stock until everything is just covered. Put a lid on and let the stew simmer gently for 30 minutes.
  • Fold in the chopped parsley green, season the soup again with salt and pepper and serve.
