Potato-Vegetable Soup

Ingredients for 4 servings:

  • 1 ½ liters vegetable broth or meat broth
  • 1 pack of soup vegetables, frozen
  • 4 large potatoes, peeled, diced
  • 8 liver dumplings or
  • 8 sausages (Vienna sausages)
  • salt and pepper
  • Parsley

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

quick to make and delicious

Add the frozen vegetables and diced potatoes to the hot broth and simmer for about 15 minutes. Season to taste and adjust if necessary. Add the liver dumplings and let them simmer in the very hot broth for 10-15 minutes, or for the Vienna sausages for a shorter time. Sprinkle with chopped parsley and serve with farmhouse bread.
