Potato wedges with herbs and garlic

Ingredients for 4 servings:

  • 8 large potatoes, unpeeled
  • 5 tbsp oil
  • 4 garlic cloves, finely squeezed
  • 1 tsp rosemary, dried
  • 1 tsp oregano, dried
  • 1 tsp thyme, dried
  • 1 tsp paprika powder (sweet or hot)
  • 1 tsp black pepper (freshly ground)
  • 2 tsp salt

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

Wash the unpeeled potatoes thoroughly, drain, and cut into eighths. Mix the remaining ingredients into a marinade and mix well with the potato wedges. Immediately (!) place the potato wedges, skin-side down, on a baking sheet lined with parchment paper. Bake at 200-220°C (fan oven) for about 35 minutes. Adjust the heat if necessary to ensure the potatoes are cooked through and don’t overbrown. Tip: If you like it spicier, replace the oil with chili oil! The amount of garlic can be varied, of course.
