Potatoes: Spinach Gnocchi – Only from Leftovers

The perfect potatoes: spinach gnocchi – only from leftovers recipe with a picture and simple step-by-step instructions.

  • Mashed potatoes / mashed potatoes

  • Flour
  • Salt and pepper
  1. Knead the mashed potatoes with spinach – here two tablespoons of spinach and four tablespoons of puree – with enough flour to make a smooth dough that is almost no longer sticky.
  2. Form small hazelnut balls out of the dough and place them on a board.
  3. Dip a fork in flour and use it to flatten the balls.
  4. Bring the water to the boil, salt it and cook the gnocchi in it until they rise to the surface.
  5. Take out, drain and then further process, that is, serve immediately with something, let cool on a tray and then freeze for further use, or fry in clarified butter until crispy.
  6. Of course, you can also make this gnocchi from pressed potatoes. They are then used in the same way as the puree.
