Ingredients for 4 servings:
- 800 g waxy potatoes
- 100 g lard, even better is crackling lard
- 2 onions, red
- salt and pepper
- ½ dl broth (only if the potatoes are too dry)
- ½ bunch chives
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes
Slovene mashed fried potatoes. Similar dishes are also available in Croatia and other southeastern European countries.
Wash the potatoes and boil in salted water for about 20 minutes until soft. In the meantime, peel the onions and finely dice them. Heat the lard in a large frying pan and slowly sauté the onions in the fat. Peel the cooked potatoes and thinly slice them directly into the pan with the fat and onions. Season with salt and pepper. Fry over medium heat for about 20-30 minutes, turning occasionally. The potatoes should get a nice color and be slightly mashed. Moisten with a little broth before serving, if desired. Arrange directly on plates or in a bowl and sprinkle with finely chopped chives. This pairs perfectly with a delicious roast pork with cabbage and vegetables.
