Pretzel dumplings

Ingredients for 6 servings:

  • 8 pretzels from the previous day
  • 1 onion(s)
  • 250 ml milk
  • 2 tbsp parsley, chopped
  • 3 eggs
  • Salt and pepper, ground
  • possibly breadcrumbs
  • some butter

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the pretzels into large slices or cubes, pour hot milk over them, and let them soak for 20-30 minutes. Turn them over after 10 minutes. Peel and finely chop the onion, and sauté it in the butter until translucent. Mix the pretzels with the onions, chopped parsley, and eggs, season with salt and pepper. Add a little breadcrumbs if the dough is too soft. With wet hands, form 6-7 dumplings and simmer in boiling salted water for about 25 minutes. Remove the cooked dumplings from the water and drain well. The parsley isn’t absolutely necessary at this point, but it does add flavor.
