Ingredients for 1 servings:

  • 200 g low-fat curd cheese
  • 50 g low-fat margarine
  • 130 g spelt flour
  • 50 g wholemeal flour
  • 1 tsp baking powder
  • ½ tsp salt

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 35 minutes

Mix all ingredients, shape into a ball, wrap in cling film, and refrigerate for 15 minutes. Place the dough ball in a greased quiche dish or springform pan lined with baking paper. Press and flatten from the inside out with your fingers, forming a raised edge. Prick the base with a fork. Spread any filling you like over the base. Bake in an oven preheated to 200°C (top/bottom heat) according to the recipe for about 30-40 minutes on the middle rack. The quark gives the dough a slightly sour, fresh flavor that pairs well with any filling. It has already been tested with the following fillings: salmon and leek, pumpkin, leek, and mushroom filling, and Mediterranean vegetables. For those who want to enjoy something lower in calories and higher in protein.
