Ingredients for 1 servings:

  • 500 g flour
  • 250 ml milk
  • 3 eggs
  • 40 g yeast
  • 3 tbsp sugar
  • 75 g butter
  • 250 g raisins
  • Lard or oil
  • Sugar, for sprinkling

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

East Frisian specialty

These typical East Frisian, small cakes are called Prüllkers. Heat the milk (do not boil), add the yeast and 2 teaspoons of sugar. Let it rise for about 15 minutes. Then put the flour in a bowl. Add the milk with the dissolved yeast and sugar, along with the eggs, the remaining sugar, the butter, and the raisins. Knead everything into a smooth dough. Let the dough rise for about 30 to 45 minutes, until it has roughly doubled in size. Heat the fat to about 160 degrees Celsius (320 degrees Fahrenheit) and place the dough in small portions (about the size of a chicken egg) into the deep fryer and fry the dough balls until golden brown. To serve, sprinkle the pastry with sugar. Best served warm.
