Ingredients for 4 servings:
- 4 pieces of puff pastry (squares)
- 2 m.-large apples, sour (Elstar)
- 4 tbsp sugar
- 1 tsp brown sugar
- ¼ liter white wine
- some lime juice
- 1 cup powdered sugar
- 1 egg(s)
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes
Place the puff pastry squares on baking paper and let thaw. Halve the apples, place them in the center of the puff pastry, and cut the square into the shape of a large apple. Shape the leftover pastry into stems and leaves. Peel and core the apples, cut them into fan-shaped slices, and drizzle with a little lime juice to prevent them from browning. Caramelize the 4 tablespoons of sugar with 4 tablespoons of white wine in a saucepan. Deglaze with the remaining white wine and let the apple halves sit for about 3-4 minutes. Remove from the pan and place on the prepared puff pastry, sprinkle with a little brown sugar. Use egg white to attach the stems and leaves. Brush the overhanging pastry edges with egg yolk and bake in a preheated oven at 180°C for about 25 minutes until golden brown. Once cooled, make a glaze from powdered sugar and lime juice and garnish the cakes with it.
