Puff pastry tart with cooked ham and mushrooms

Ingredients for 2 servings:

  • 1 pack of puff pastry
  • 2 shallots, diced
  • 300 g cooked ham
  • Fat for frying
  • 1 cup of yogurt
  • 2 eggs
  • 1 tsp cornstarch
  • 1 tsp sweet paprika powder
  • 100 g cheese (Emmentaler,) grated
  • 1 can mushrooms, whole heads
  • 2 tsp basil (frozen)
  • possibly salt

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Easily enough for 3 – great as a starter

Place the puff pastry in a cold, rinsed tart tin and pierce with a fork. Peel and dice the shallot, and also dice the ham. Briefly fry both in a pan with a little fat and then spread them over the pastry. Mix the yogurt with the eggs, paprika, cornstarch, and basil, adding a little more salt if desired. Pour the mixture over the ham. Drain the mushrooms. If they are too large, halve them and spread them in the tin. Sprinkle with the cheese and bake at 200°C (fan oven) for about 20-25 minutes.
