Ingredients for 1 servings:
- 250 g pumpkin flesh, finely grated or
- Apples or
- Carrot(s)
- 250 g flour
- 2 tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- ¼ tsp cinnamon
- 2 eggs
- 100 g sugar
- 100 g butter, soft
- 150 ml orange juice
- 100 g yogurt
- 30 g almonds, chopped
- Fat for the mold
- possibly paper cups

not only a treat on Halloween
Preheat the oven to 190°C (top/bottom heat 160°C fan/convection oven). Grease a muffin tin or line it with paper baking cups. Combine the flour, baking powder, baking soda, salt, and cinnamon. Whisk the eggs, then stir in the sugar, butter, orange juice, and yogurt. Add the flour mixture, then fold in the grated pumpkin. Pour the batter into the prepared muffins. Bake in the oven for about 20 minutes. The muffins also taste delicious with the same amount of carrots or apple instead of pumpkin.
