Ingredients for 1 servings:

  • 6 eggs
  • 240 g sugar
  • 1 packet of vanilla sugar
  • 180 g flour
  • 500 g QimiQ
  • 250 g low-fat quark (low-fat curd cheese)
  • 100 g sugar
  • 1 packet of vanilla sugar
  • ½ lemon(s)
  • 250 ml cream

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 15 minutes

Preheat the oven to 180°C (top/bottom heat). Beat the eggs, sugar, and vanilla sugar with a mixer on high for about 12 minutes (the mixture should triple in volume). Then fold in the flour with a whisk. Pour the batter into a 26cm springform pan lined with baking paper. Bake in the hot oven for about 30-40 minutes. For the filling, beat the QimiQ until smooth. Then add the low-fat curd cheese, sugar, vanilla sugar, and lemon juice and mix well. Whip the cream until stiff and fold into the mixture. Cut the cake base in half and place the bottom half in a cake ring, spread with the cream, and place the second half on top. Leave the cake to set in the refrigerator for a few hours.
