Quark and Spinach Buffer with Raw Vegetable Salad
The perfect quark and spinach buffer with raw vegetable salad recipe with a picture and simple step-by-step instructions.
Quark and spinach buffer: (Makes 6 buffers!)
- 250 g Quark 20%
- 60 g Durum wheat semolina
- 30 g Freshly grated hard cheese
- 1 Egg (here: a twin egg!)
- 3 big pinches Coarse sea salt from the mill
- 2 big pinches Colorful pepper from the mill
- 1 big pinch Nutmeg
- 1 Small onion about 50 g
- 1 Clove of garlic
- 75 g Spinach
- 0,5 tbsp Clarified butter
- 6 tbsp Sunflower oil
Raw fruit and vegetables salad:
- 1 Carrot approx. 150 g
- 1 piece Celery / cleaned approx. 150 g
- 2 Spring onions approx. 50 g
- 2 big pinches Coarse sea salt from the mill
- 2 big pinches Colorful pepper from the mill
- 2 tbsp Cooking cream
- 1 tbsp Olive oil
Serve:
- 2 Small tomatoes for garnish
Quark and spinach buffer:
- Put quark in a tea towel and squeeze out the liquid well. Grate hard cheese fresh. Peel and finely dice the onion and clove of garlic. Clean, wash and roughly cut the spinach. Heat the clarified butter in a pan, fry the onion and garlic clove cubes in it / stir-fry, add the spinach and stir-fry until it has collapsed. Let the spinach cool down well. Put all ingredients (squeezed quark, durum wheat semolina, grated hard cheese, 1 egg, sea salt from the mill, colored pepper from the mill, nutmeg and onion-garlic-spinach mixture) in a bowl, mix well and let rest / soak for approx. 30 minutes. Heat the oil (3 tbsp) in a pan and fry the first 3 buffers on both sides until golden-brown. Be very careful when turning, otherwise the buffers can disintegrate quickly. Pour oil (3 tbsp) into the pan and do the same with the last 3 buffers.
Raw fruit and vegetables salad:
- Peel the carrot and celery and grate with a kitchen grater. Clean and wash the spring onions and cut into fine rings. Put all ingredients (grated carrot and celery, spring onion rings, 2 big pinches of coarse sea salt from the mill, 2 big pinches of colored pepper from the mill, 2 tablespoons of cooking cream and 1 tablespoon of olive oil) in a bowl, mix well and mix Chill until ready to serve.
Serve:
- Quark-spinach buffer garnished with raw vegetable salad and a small tomato, serve.
