- 100 g Flour
- 250 g Goat cream cheese
- 500 g Potatoes
- 50 g Vanilla sugar
- 1 Egg
- Grated lemon peel
- 50 g Raisins
- Rum
- Clarified butter
- 2 Apples
- Prunes
- Ginger
- Cinnamon
- Almonds
- Salt
- 400 ml Cream 30% fat
- 88 g Preserving sugar 2: 1
- 4 piece Star anise
- Quarkkäulchen comes from “Kaule”, Middle German for ball. Boil the potatoes, press them through, pass them through a fine sieve and mix with the flour, quark, lemon peel, rum raisins, a pinch of salt and sugar to form a dough. Shape small meatballs. Fry in clarified butter until golden brown. Raisins can also be placed in wine or other alcohol, or in fruit juice for alcoholics. Hot liquid helps. Floury potatoes have proven their worth. Only real vanilla sugar is used, vanillin is strictly forbidden!
- Remove the apples from the housing. Cut the ginger into slices and pour boiling water over them, leave to stand for 10 minutes. Cut the prunes into fine cubes, chop the almonds. Everything from the Lamäng, depending on how much fits in the apples. Boil plums in ginger water (without ginger, we’ll take it out) until soft. Drain, mix with the almonds, season with cinnamon. Only if it isn’t sweet enough to add a little honey. Bake the baked apples at something <180 ° for approx. 30 minutes. The baked apples are done when the skin rips open.
- Ice cream: Bring the cream with the star anise to the boil, allow to cool completely, ideally let it steep in the refrigerator overnight. Remove the aniseed, add the preserving sugar. Let simmer for four minutes. Pour slowly into the four egg yolks (mixer), stirring continuously. Off to the ice cream machine!
