Ingredients for 3 servings:

  • 500 g low-fat curd cheese
  • 1 egg(s)
  • some salt
  • 8 tbsp flour
  • Fat, for frying

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Recipe from my Allgäu grandmother

Drain the quark well (preferably overnight). Mix the drained quark with the egg and salt. Knead in the flour until the dough is no longer moist and easy to shape. Last time I used more than 10 tablespoons! Shape the dough into a long roll, a little thicker than your thumb. Cut off finger-length pieces, shape them slightly, and coat them again in a little flour if necessary (otherwise they might stick). Heat some fat in a pan and fry the noodles until light brown on all sides. We like this best with a large bowl of lettuce or a mixed salad.
