Quark semolina casserole

Ingredients for 10 servings:

  • 250 g butter
  • 250 g sugar
  • 2 packets of vanilla sugar
  • 250 g quark (low-fat quark)
  • 10 eggs
  • 150 g semolina
  • 100 g lemon juice
  • 20 g butter for the mold
  • 20 g semolina for the mold
  • possibly apricot jam

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Beat the butter, vanilla sugar, sugar, and eggs until fluffy. Gently fold the quark into the egg mixture. Add the semolina and mix thoroughly. Add the lemon juice and let the mixture rest for 10-15 minutes. In the meantime, grease the baking tray thoroughly and sprinkle with semolina. Don’t forget to trim the edges. Pour the mixture into the baking dish and bake at 160-170°C for about 30-40 minutes until golden brown. After baking, spread with apricot jam. Can be eaten warm with hot cherries or vanilla sauce, but also tastes great cold with a good cup of coffee.
