Quark wholemeal spelt bread or rolls

Ingredients for 1 servings:

  • 300 g wholemeal spelt flour
  • 200 g wheat flour type 550
  • 2 eggs
  • 2 tsp salt
  • 500 g quark
  • 1 tsp honey
  • 1 packet of baking powder
  • e.g. oat flakes, sunflower seeds etc. for rolling

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Simple and fast

Mix the quark, eggs, salt, and honey together with a hand mixer or food processor. Then, stir in both types of flour and the baking powder and knead everything into a smooth dough. Shape the dough into a loaf, rolls, or both (works great), and then roll in oatmeal or something else, if desired. In the meantime, preheat the oven to 200°C (top/bottom heat) or 175°C (fan). Place a bowl of cold water in the still-cold oven. If you have a 175°C (circular heating element), pour cold water into the bottom of the oven cavity and then preheat the oven. Place the oven rack on the lowest shelf. Just before baking, brush the baked goods with water or spray them with a fine spray. One loaf needs about 40 minutes to bake. Rolls need about 25 minutes to bake. Two small loaves need about 35 minutes to bake. If the bread/rolls start to get too brown, cover them with aluminum foil.
